This proceeding comprises papers based on oral and poster presentations at the COST860 - SUSVAR workshop on cereal crop diversity held in La Besse, France, 13-14 June 2006. L'automezzo inoltre ospita una cucina per la preparazione dei campioni da sottoporre ad analisi. Ecology of the ochratoxin A producing Penicillium verrucosum: Occurrence in field soil and grain with special attention to farming system and on-farm drying practices Organic Eprints

Mycotoxin contamination of organically grown cereals has been a growing concern during recent years, one of the most important being ochratoxin A (OTA). In countries with a temperate, humid climate, OTA is produced by Penicillium verrucosum and it is crucial to focus on the fungus to obviate problems. This paper presents results to elucidate different aspects of the ecology of P. verrucosum. In a survey of differently farmed soils, P. verrucosum was found in 11 out of 65 soils (35% of the organically and 7% of the conventionally cultivated), these being the first reports of its natural occurrence in soil. Effect of ascorbic acid and glutathione on the production of nitriles by myrosinase Organic Eprints

Biofumigation is based on the use of glucosinolate-containing plants for the control of soil-borne pest and diseases. Upon tissue damage, glucosinolates are hydrolyzed by endogenous enzymes (myrosinase) and a range of biologically active compounds are formed. Isothiocyanates (ITCs) are the quantitatively dominating products formed at neutral pH. Most of these compounds are volatile and only sparingly soluble in aqueous systems, and depending on the R-group structure and the presence of nucleophiles, further transformation of ITCs occurs. Effect of organic and conventional crop production systems on food quality and safety Organic Eprints

Ergebnisse einer Studie zur Formulierung eines arteigenen Profils von Einkorn Organic Eprints

29 Kultureinkornsorten (Triticum monococcum L.) wurden unter Anbaubedingungen des ökologischen Landbaus auf sandigen Böden in Norddeutschland mit Weizen, Emmer und Dinkel verglichen. Einkorn zeichnete sich durch intensiv hellgrünes, festes Stroh und seine filigrane Gestalt aus. Bei der Aussaat im Frühherbst war die Anzahl der Bestockungstriebe bis zu zweimal so hoch wie bei Weizen, die Wuchshöhe der lag dagegen in den frühen Stadien niedriger und das Ährenschieben erfolgte 1 bis 12 Tage später. Die besten Einkornproben erzielten einen Ertrag von 60-70 % der Ernteerträge von Dinkel. Der Beta-Carotin-Gehalt war mit 1-2 % der Trockenmasse zwei bis drei mal so hoch wie bei Hartweizen üblich. First results with the Gas Discharge Visualisation (GDV) method (Kirlian photography) to assess the inner Quality of apples Organic Eprints

GDV technology can provide useful information for distinguishing healthy and stressed plants and, in some cases, it can provide useful information for distinguishing different varieties and rootstocks. It can also provide information for distinguishing fruits grown using different fertilization treatments. However, in our cases with fruit of very similar standard quality, we were not able to find complementary information to distinguish organically from conventionally grown apple fruit. Currently we are carrying out two larger and refined studies on just that topic with 5 conventional/ organic comparison pairs from harvests of two years.

Mit dem Ziel, die Marktsituation für den Konsumenten hinsichtlich der Produktqualität zu beschreiben, wurden Proben von Speisemöhren des Anbaujahres 1996 aus der biologisch-dynamischen (n=57) und konventionellen (n=18) Praxis gesammelt. An den Möhren wurden Einzelrübengewicht, Trockenmasse, Mineralstoffe (P, K, Na, Ca, Mg, S, Fe, Zn, Mn, Cu, B, Pb, Cd) und Zuckergehalte (D-Glucose, D-Fructose, Saccharose) bestimmt. Wesentliches Differenzierungsmerkmal zwischen den Proben der beiden Anbausysteme war der Trockensubstanzgehalt, der bei den biologisch-dynamischen Möhren im Mittel um relativ 20% höher lag. In a 3 years lasting field study with the ‘Golden Delicious’ cultivar, we compared fruits of 5 pairs of organic/integrated fruit farms. The orchards were similar in microclimate, soil conditions and planting system. To assess inner fruit quality we investigated at the beginning and at the end of cold storage: (i) standard parameters (firmness, sugar, malic acid., mineral content); (ii) sensorial quality by panel tests; (iii) health related components (23 phenolic compounds, nutritional fibres; vitamins); and (v) fruit «vitality quality» by holistic approaches (crystallisation in copper chloride, self degradation tests, feeding preference tests with laboratory rats). Einleitung: Der Getreidebau war in der ersten Phase ein Schwerpunkt im Leitbetriebe-Projekt. Nicht zuletzt aufgrund sinkender Getreidepreise wurden in der Folge verstärkt Kulturen mit höherer Wertschöpfung als Getreide wie bspw. Feldgemüse oder Kartoffeln wissenschaftlich bearbeitet. Auf allen Leitbetrieben wird Getreide in unterschiedlich starkem Ausmaß angebaut. Bis heute werden Untersuchungen zur Sortenwahl bei Winterroggen, Winter- und Sommerweizen sowie Dinkel durchgeführt. Influence of pH and type of myrosinase complex on the products obtained in the myrosinase catalysed hydrolysis of glucosinolates – a MECC study Organic Eprints

Environmental conditions, e.g. pH and the presence of Fe2+ are well known factors that influence the product profile of the myrosinase catalysed hydrolysis of glucosinolates. Depending on the plant genera, the species and tissue of origin myrosinase isoenzymes (thioglucohydrolase EC 3.2.1.147) have different characteristics in terms of MW, subunit composition and pI. Im Salatkopf können die Blattränder Nekrosen (sog. Innenbrand) aufweisen. Dies steht in Zusammenhang mit einem unzureichenden Calcium Transport in die Blätter, da Ca als essentieller Baustein biologischer Membranen benötigt wird und Pektinsäure der Mittellamelle der Zelle zu Ca-Pektinat absättigt. Innenbrand kann bis zu Totalausfällen, einhergehend mit hohen Einnahmeverlusten führen. Die Ursache für diesen Qualitätsmangel liegt jedoch nicht in einem zu geringen Ca-Gehalt des Bodens, sondern u.a. in der Immobilität von Ca in der Pflanze, einem übermäßigen N-Angebot, einem zu schnellen Wachstum der Pflanze, ungünstigen Transpirationsbedingungen, empfindlichen Sorten sowie zu geringem Wurzelwerk. Fazit Die Mineralstoffgehalte von 12 Sorten Eis- und Kopfsalat aus biologisch-dynamischem Anbau wiesen starke inverse Beziehung zu den ebenfalls sehr unterschiedlichen Kopfgewichten auf, da vermutlich das Wachstum von Kopf und Wurzeln nicht im Gleichgewicht steht. Innenbrand stand in starker Beziehung zu den Ca-Gehalten, wenn die Kopfgewichte in die Betrachtung einbezogen wurden. Speziell die biologisch-dynamische Züchtung sollte sowohl mit Blick auf den Innenbrand als auch die Nahrungsqualität nicht nur das Wachstum des oberirdischen sondern auch des unterirdischen Teils der Salatpflanze fördern.

A micellar electrokinetic capillary chromatography (MECC) method has been developed for monitoring the myrosinase catalysed hydrolysis of 2-hydroxy substituted glucosinolates and the simultaneous formation of the corresponding degradation products (oxazolidine-2-thiones (OZTs) and nitriles). Glucosibarin ((2R)-2-hydroxy-2-phenylethylglucosinolate) was chosen as the model glucosinolate owing to the difficulties in determining hydrolysis rates of this type of substrates in traditional UV-assays. New methods for organic raspberry production in polyethylene tunnels Organic Eprints
Raspberries for the fresh market is a new and very profitable crop in Norway, and the production in polyethylene tunnels is increasing rapidly. In Norwegian organic production, the experience so far is that using tunnels is a prerequisite if growing for the fresh market. The project focuses on the major bottlenecks in organic tunnel production of raspberries. The project will develop methods for controlling the most damaging pests (raspberry beetle, aphids and mites) and methods for secure and efficient supply of organic nutrients in tunnels.
