The quality assessment and comparison of differently cultivated products still represents a problem. On the one hand “quality” comprises many, mostly target group oriented aspects, necessitating the application of relevant methods, on the other hand the interpretation of diviating results is not easy or suitable to corroborate cultivation dependent quality aspects systematically. Biofumigation is based on the use of glucosinolate-containing plants for the control of soil-borne pest and diseases. Upon tissue damage, glucosinolates are hydrolyzed by endogenous enzymes (myrosinase) and a range of biologically active compounds are formed. Isothiocyanates (ITCs) are the quantitatively dominating products formed at neutral pH. Most of these compounds are volatile and only sparingly soluble in aqueous systems, and depending on the R-group structure and the presence of nucleophiles, further transformation of ITCs occurs. At lower pH and in the presence of certain molecules able to deliver two redox equivalents, the proportion of nitriles increases at the expense of ITC. A range of comparative studies have recently been carried out to compare the composition of foods produced in organic, “low input” and conventional production systems. This paper will review the currently available information on nutritional differences between organic and non-organic crops. It will also describe the Nafferton Factorial Systems Experiment which was established as part of the IP Quality-LowInputFood to study the effect (and interactions between) (a) rotational design, (b) fertility management and (c) crop protection regimes on crop quality and safety. |

Mit dem Ziel, die Marktsituation für den Konsumenten hinsichtlich der Produktqualität zu beschreiben, wurden Proben von Speisemöhren des Anbaujahres 1996 aus der biologisch-dynamischen (n=57) und konventionellen (n=18) Praxis gesammelt. An den Möhren wurden Einzelrübengewicht, Trockenmasse, Mineralstoffe (P, K, Na, Ca, Mg, S, Fe, Zn, Mn, Cu, B, Pb, Cd) und Zuckergehalte (D-Glucose, D-Fructose, Saccharose) bestimmt. Wesentliches Differenzierungsmerkmal zwischen den Proben der beiden Anbausysteme war der Trockensubstanzgehalt, der bei den biologisch-dynamischen Möhren im Mittel um relativ 20% höher lag. In a 3 years lasting field study with the ‘Golden Delicious’ cultivar, we compared fruits of 5 pairs of organic/integrated fruit farms. The orchards were similar in microclimate, soil conditions and planting system. To assess inner fruit quality we investigated at the beginning and at the end of cold storage: (i) standard parameters (firmness, sugar, malic acid., mineral content); (ii) sensorial quality by panel tests; (iii) health related components (23 phenolic compounds, nutritional fibres; vitamins); and (v) fruit «vitality quality» by holistic approaches (crystallisation in copper chloride, self degradation tests, feeding preference tests with laboratory rats). Environmental conditions, e.g. pH and the presence of Fe2+ are well known factors that influence the product profile of the myrosinase catalysed hydrolysis of glucosinolates. Depending on the plant genera, the species and tissue of origin myrosinase isoenzymes (thioglucohydrolase EC 3.2.1.147) have different characteristics in terms of MW, subunit composition and pI. Im Salatkopf können die Blattränder Nekrosen (sog. Innenbrand) aufweisen. Dies steht in Zusammenhang mit einem unzureichenden Calcium Transport in die Blätter, da Ca als essentieller Baustein biologischer Membranen benötigt wird und Pektinsäure der Mittellamelle der Zelle zu Ca-Pektinat absättigt. Innenbrand kann bis zu Totalausfällen, einhergehend mit hohen Einnahmeverlusten führen. Die Ursache für diesen Qualitätsmangel liegt jedoch nicht in einem zu geringen Ca-Gehalt des Bodens, sondern u.a. in der Immobilität von Ca in der Pflanze, einem übermäßigen N-Angebot, einem zu schnellen Wachstum der Pflanze, ungünstigen Transpirationsbedingungen, empfindlichen Sorten sowie zu geringem Wurzelwerk. A micellar electrokinetic capillary chromatography (MECC) method has been developed for monitoring the myrosinase catalysed hydrolysis of 2-hydroxy substituted glucosinolates and the simultaneous formation of the corresponding degradation products (oxazolidine-2-thiones (OZTs) and nitriles). Glucosibarin ((2R)-2-hydroxy-2-phenylethylglucosinolate) was chosen as the model glucosinolate owing to the difficulties in determining hydrolysis rates of this type of substrates in traditional UV-assays.
